Cute Little End Table Re-do

Hello. How is your Thursday. My week has been busy, we are off to volunteer at school. Monday, on the cold morning. I decided to re-do this little table as an end table. It is a little big for it, but was a fun project. Might actually make a cute coffee table. Don't know. Fun anyways.

Have a wonderful week!

Winter Weather.... around the corner...

Hello, happy Wednesday!

This is what we woke up to on Monday morning. Brrr. Winter is around the corner. You cant see it very well, but there is snow dusting the hills around us.

We've had below freezing mornings ever since.

The leaves will surely start to turn and fall soon.

Hope your week is going well.

Blueberry Cobbler... YUMMY

Today, I made the best cobbler/crumble ever. I had a few containers of blueberries that were very ripe and needed to make something with them since I hate throwing food away...
And this is what I found. It is soooo yummy!

Hope your Monday is just as sweet!

Ingredients

6 tablespoons butter, melted
1 1/4 cups Original Bisquick® mix
1/2 cup sugar
2/3 cup milk
3 cups fresh blueberries

  •   Heat oven to 350°F. Pour melted butter into 8 or 9-inch square baking dish.(I used a pie dish, worked great)
  •   In medium bowl, whisk together Bisquick mix, sugar, and milk; pour over melted butter.
  •   Sprinkle blueberries evenly over Bisquick batter. Bake 42 to 47 minutes, or until golden brown. Serve warm.

Fall Decorating...

Happy Wednesday!

I am looking for some fun crafts to do with the kids that are Fall related but not Halloween, not ready for that yet. So while looking on Pinterest (my favorite obsession right now) I found these lovely mercury glass pumpkins. I would love to find some of these to decorate with.

Well, off to find some fun things to do.

Have a wonderful day!

  1. Preheat oven to 425 degrees. Peel pumpkin and cut into 1-inch chunks (about 4 cups). Toss with 2 tablespoons of the olive oil, 1/2 teaspoon salt, and the honey. Roast on a baking sheet until tender, about 45 minutes.
  2. Meanwhile, bring a pot of well-salted water to a boil. Add pasta and cook according to package directions.
  3. While pasta is cooking, heat remaining 2 tablespoons olive oil, garlic, and anchovies (optional) in a skillet over medium-high heat until fragrant, about 1 minute. Add walnuts and pumpkin. Toss to combine and heat through. Set aside.
  4. Drain pasta, reserving 1 cup cooking water. Toss pasta with 1/2 cup cooking water and stir in parsley and Parmesan cheese. Season with salt and pepper, and drizzle with olive oil. Transfer to a bowl, and toss well with walnut and pumpkin mixture. Serve immediately.
